  • Use Great Quality Dark Chocolate: The better the chocolate quality, the better the mousse. Always.
  • Use Room-Temperature Eggs: Cold eggs can cause the melted chocolate to seize. Let them sit on the counter before starting (about 2 hours).
  • Melt the Chocolate Gently (Bain-Marie Style): No shortcuts. A bowl over simmering water ensures smooth, velvety results.
  • Presentation Is Everything: Dress it up in wine glasses, espresso cups, or mini jars. Add a sprig of mint, berries, or a crisp tuile and voilà.
