I can’t stop thinking about this pasta

I’ve been thinking about this pasta all week. I hadn’t made it in a while, and I need to add it to our menu asap…

If you try it, you will understand exactly why it lives rent-free in my head.

It’s creamy. It’s rich. It’s ridiculously comforting. And somehow, it tastes like something you’d order at a restaurant… except you’re in your socks, at home, on a weeknight.

This Week’s Recipe Spotlight

Meet: Creamy Rigatoni Gorgonzola with Crispy Coppa Chips

Al dente rigatoni coated in a silky gorgonzola sauce, topped with salty, crispy coppa chips for crunch. A little black pepper. A little parmesan. That’s it.

It’s the kind of meal that makes everyone at the table go quiet for a second.

You know, that kind of quiet.

The best part?
It comes together in about 20 minutes and uses just a handful of ingredients. Which means it’s very much a “real life” recipe, not a Sunday-only fantasy.

Of course, we love it because it’s fast. But we also love it because it’s easy to adapt.

  • No gorgonzola? Use another blue cheese you love.
  • No coppa? Bacon or prosciutto work beautifully.
  • Different pasta shape? Totally fine.

And if you want to make it feel a little more balanced, serve it with a simple green salad on the side. For good measure. (mom brain likes to see green on the table!)
